Zingy Crab Vermicelli

  • 400 g (13 oz) vermicelli
  • 250 g (8 oz) fresh white crabmeat
  • 6 tablespoons crème fraîche
  • juice and grated rind of 1/2 lemon
  • 1 red chilli, deseeded and finely chopped
  • handful of flat-leaf parsley, chopped
  • salt and pepper
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente. Drain, reserving a little of the cooking water, and return to the pan.
  • Stir through the remaining ingredients, adding a little cooking water to loosen if needed, and season well. Serve immediately.
