  • 1 vanilla pod, split lengthways
  • 8 egg yolks
  • 2 tablespoons caster sugar
  • 4 tablespoons marsala
  • light, thin biscuits, to serve
  • Scrape the seeds from the split vanilla pod and place in a bowl with the egg yolks, sugar and marsala. Whisk together with a balloon whisk.
  • Place the bowl over a saucepan of simmering water, with the heat on very low, and continue to whisk for 8–10 minutes, until the mixture is very light and foamy and holds its shape.
  • Spoon into 4 glasses and serve with light, thin biscuits.
