100 g (3 1/2 oz) ready-to-eat dried apricots, roughly chopped
100 g (3 1/2 oz) dried figs, chopped
100 g (3 1/2 oz) prunes, pitted
2 tablespoons raisins
2 tablespoons dried cherries
2 plums, halved and stoned
1 pear, peeled cut into wedges
3 tablespoons orange juice
grated rind of 2 oranges
3 tablespoons honey
100 ml (3 1/2 fl oz) boiling water
250 g (8 oz) ricotta cheese
100 g (3 1/2 oz) natural yogurt
Stir together all the fruit, 2 tablespoons of the orange juice, the grated rind of 1 orange and 2 tablespoons of the honey in a saucepan. Pour in the measurement water and bring to a gentle simmer, then cook for 6–7 minutes, stirring occasionally. Leave to stand for 8–10 minutes.
Meanwhile, beat together the remaining orange juice, orange rind and honey with the ricotta and yogurt in a large bowl.
Spoon the winter fruits into 4 bowls and serve with the orange ricotta.
