Winter Fruits with Orange Ricotta

Ingredients
  • 100 g (3 1/2 oz) ready-to-eat dried apricots, roughly chopped
  • 100 g (3 1/2 oz) dried figs, chopped
  • 100 g (3 1/2 oz) prunes, pitted
  • 2 tablespoons raisins
  • 2 tablespoons dried cherries
  • 2 plums, halved and stoned
  • 1 pear, peeled cut into wedges
  • 3 tablespoons orange juice
  • grated rind of 2 oranges
  • 3 tablespoons honey
  • 100 ml (3 1/2 fl oz) boiling water
  • 250 g (8 oz) ricotta cheese
  • 100 g (3 1/2 oz) natural yogurt
Directions
  • Stir together all the fruit, 2 tablespoons of the orange juice, the grated rind of 1 orange and 2 tablespoons of the honey in a saucepan. Pour in the measurement water and bring to a gentle simmer, then cook for 6–7 minutes, stirring occasionally. Leave to stand for 8–10 minutes.
  • Meanwhile, beat together the remaining orange juice, orange rind and honey with the ricotta and yogurt in a large bowl.
  • Spoon the winter fruits into 4 bowls and serve with the orange ricotta.
