Winter Dried Fruit Salad

prep 5 mins, plus soaking cook 10–15 mins
  • 175 g (6 oz) dried apricots
  • 125 g (4 oz) dried prunes
  • 125 g (4 oz) dried figs
  • 125 g (4 oz) dried apples
  • 600 ml (1 pint) apple juice
  • 2 tablespoons Calvados or brandy
  • 25 g (1 oz) walnuts, roughly chopped

Place the dried fruits in a bowl with the apple juice and leave to soak overnight.

Transfer the fruits and juice to a saucepan and simmer for 10–15 minutes.

Turn into a glass bowl and pour over the Calvados or brandy. Sprinkle with the walnuts. Serve warm or cold with crème fraîche or cream.
