Wholemeal Cheese Straws

  • 100 g (3 1/2 oz) wholemeal plain flour, plus extra for dusting
  • 2 teaspoons paprika
  • 150 g (5 oz) mature Cheddar cheese, grated
  • 100 g (3 1/2 oz) chilled unsalted butter, diced
  • 2 teaspoons baking powder
  • 2 egg yolks
  • Mix together the flour and paprika in a bowl, then stir in the cheese. Add the butter and rub in with the fingertips until the mixture resembles fine breadcrumbs. Stir in the baking powder, then add the egg yolks and mix to a stiff dough.
  • Turn the dough out on to a floured surface and press or roll out to about 5 mm (1/4 inch) thick. Cut into 1 cm (1/2 inch) wide straws and place on a baking sheet.
  • Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 10–12 minutes until golden. Transfer to a wire rack to cool.
