White Chocolate & Banana Loaf

prep Time 1—2 hours, depending on machine
  • 225 g (7½ oz) mashed banana (about 2 large bananas)
  • 150 ml (¼ pint) warm milk
  • 50 g (2 oz) unsalted butter, softened
  • ½ teaspoon salt
  • 425 g (14 oz) strong white bread flour
  • 50 g (2 oz) caster sugar
  • 2½ teaspoons fast-action dried yeast
  • 200 g (7 oz) white chocolate, chopped
  • 100 g (3½ oz) pecan nuts, roughly chopped
  • icing sugar, for dusting

Lift the bread pan out of the machine and fit the blade. Put the ingredients, except the chocolate and nuts, in the pan, following the order specified in the manual. Add the mashed banana with the milk.

Fit the pan into the machine and close the lid. Set to a 750 g (1½ lb) loaf size on the fast/rapid bake programme. Add the chocolate and pecans when the machine beeps.

At the end of the programme lift the pan out of the machine and shake the bread out on to a wire rack to cool. Serve dusted with icing sugar.
