Watermelon with Mint Sugar

  • 1 kg (2 lb) watermelon
  • 4 tablespoons golden caster sugar
  • 20 g (3/4 oz) mint leaves
  • Remove the skin from the watermelon and cut the flesh into cubes, discarding any seeds. Divide between 4 plates.
  • Place the sugar and mint in a food processor and pulse to form a bright green sugar.
  • Serve the watermelon sprinkled with the mint sugar.
