Warm Spiced Plums with Ice Cream

  • 750 g (1 1/2 lb) ripe plums, halved and stoned
  • 100 g (3 1/2 oz) caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 3 tablespoons water
  • good-quality ice cream, to serve
  • Place all the ingredients except the ice cream in a large, heavy-based saucepan and bring to the boil, stirring occasionally. Reduce the heat to low, cover and very gently simmer, stirring occasionally, for 15–20 minutes until the plums are tender.
  • Transfer to a large serving dish and leave to cool for 5 minutes before serving.
  • Serve with scoops of good-quality ice cream.
