Warm Pasta Salad with Lemon and Broccoli

Ingredients
  • 375 g (12 oz) penne or rigatoni
  • 150 g (5 oz) broccoli florets
  • 100 g (3 1/2 oz) frozen soya beans
  • 100 g (3 1/2 oz) frozen peas
  • 100 g (3 1/2 oz) sugarsnap peas, trimmed
  • 150 g (5 oz) soft cheese with garlic and herbs
  • finely grated zest and juice of 1 lemon
  • 4 tablespoons olive oil
  • 1 red chilli, deseeded and finely chopped
  • 100 g (3 1/2 oz) grated pecorino cheese
  • 2 tablespoons chopped tarragon leaves
  • salt and pepper
Directions
  • Cook the pasta in a large saucepan following the pack instructions, adding the broccoli florets, soya beans, peas and sugarsnaps for the final 3 minutes of its cooking time.
  • Drain the pasta and vegetables, saving a ladleful of the cooking water, then tip back into the pan.
  • Stir in the soft cheese, lemon zest and juice, olive oil, chilli, pecorino, tarragon, some seasoning and a splash of cooking water.
  • Serve the salad warm or at room temperature.
