Vanilla and Berry-Soaked Sponge Puddings

  • 1 vanilla pod, split lengthways
  • 400 g (13 oz) frozen forest fruit berries
  • 50 g (2 oz) soft dark brown sugar
  • 1 medium sponge flan base, cut into 6 wedges
  • 6 scoops of vanilla ice cream or clotted cream
  • Scrape the seeds from the vanilla pod and place both the seeds and pod in a saucepan with the berries and sugar. Heat gently, stirring occasionally, until the sugar has dissolved and the fruit collapsed.
  • Arrange the sponge wedges in 6 serving dishes and spoon over the warm berries, discarding the vanilla pod. Top each portion with 1 scoop of vanilla ice cream or clotted cream and serve immediately.
