Vanilla and Banana Yogurt

  • 4 large ripe bananas
  • 1 tablespoon clear honey
  • seeds from 1 vanilla pod or 1 teaspoon vanilla bean paste or vanilla extract
  • 500 g (1 lb) natural or vanilla yogurt, plus extra to serve (optional)
  • fresh blueberries, to serve
  • Peel and roughly chop the bananas and place them in a bowl with the honey and vanilla seeds, vanilla bean paste or vanilla extract.
  • Mash the bananas until pulpy, then stir in the yogurt.
  • Spoon the mixture into cups and serve scattered with fresh blueberries and extra yogurt, if desired.
