Turkey Burgers with Spicy Salsa

  • 500 g (1 lb) lean minced turkey
  • finely grated rind of 1 lime
  • 3 spring onions, trimmed
  • 1 tablespoon sweet soy sauce or ketjap manis
  • 1 teaspoon ground cumin
  • 100 g (3 1/2 oz) fresh breadcrumbs
  • 1 small egg, lightly beaten
  • 4 small ciabatta-style buns
  • 2 romaine lettuce hearts, shredded, to serve
  • 250 g (8 oz) cherry tomatoes, quartered
  • 1 red chilli, deseeded and finely chopped
  • 2 spring onions, finely sliced
  • 1 tablespoon lime juice
  • 1 tablespoon sweet soy sauce or ketjap manis
  • 1 small bunch of coriander, chopped
  • 1 firm, ripe avocado
  • Place the minced turkey in a large bowl with the lime rind, spring onions, soy sauce, cumin, breadcrumbs and egg. Mix until well combined then form into 8 flattened patties.
  • Transfer the burgers to a grill rack and slide under a preheated grill for 3–4 minutes each side until browned and cooked through.
  • Meanwhile, make the spicy salsa by putting all the salsa ingredients in a bowl and stir until well combined. Set aside.
  • Cut the ciabatta rolls in half and place the rolls, cut side up, on a grill rack. Slide under a preheated grill and toast for 1–2 minutes until lightly charred.
  • When the burgers are ready, place them on the toasted rolls with the romaine lettuce leaves and top with the salsa. Serve as open burgers.
