Tuna and Sweetcorn Nuggets

  • 75 g (3 oz) plain flour, plus extra for coating
  • 1 large egg
  • 2 tablespoons milk
  • pinch of chilli powder (optional)
  • 185 g (6 1/2 oz) can tuna, drained and flaked
  • 150 g (5 oz) can sweetcorn, drained
  • 2 spring onions, chopped
  • 3 tablespoons sunflower oil
  • salt and pepper
  • tomato ketchup, to serve
  • Place the flour in a bowl and make a well in the centre. Add the egg, milk and chilli powder, if using, and season with salt and pepper. Stir well to make a stiff batter.
  • Add the tuna, sweetcorn and spring onions and stir until evenly mixed. Take tablespoons of the mixture, dip them in flour and roughly shape into 16 nuggets.
  • Heat the oil in a large frying pan, add the nuggets and fry, in 2 batches, for about 5 minutes, turning occasionally, until golden. Drain on kitchen paper and serve with ketchup.
