Tuna and Cannellini Bean Salad

Ingredients
  • 410 g (13 1/4 oz) can tuna, drained
  • 100 g (3 1/2 oz) chopped tomatoes
  • 30 g (1 1/4 oz) pitted black olives
  • 1 x 400 g (13 oz) can cannellini beans, rinsed and drained
  • 1 red onion, sliced
  • 50 g (2 oz) rocket leaves
  • extra-virgin olive oil, to serve
Directions
  • Place the tuna in a serving bowl and break it into chunks using a fork.
  • Mix in the chopped tomatoes, black olives, cannellini beans, red onion and rocket leaves.
  • Drizzle with olive oil and serve immediately.
