Tropical Salsa with Ice Cream

  • 1 passion fruit
  • 1 ripe mango, stoned, peeled and finely diced
  • 100 g (3½ oz) pineapple, finely diced
  • 1 piece of preserved stem ginger, finely diced
  • 1 teaspoon preserved stem ginger syrup
  • 1 teaspoon finely shredded mint
  • ½ teaspoon finely shredded coriander leaves
  • ice cream of your choice, to serve
  • Halve the passion fruit and scoop the pulp into a sieve over a bowl and press the seeds to get all the juice out. Discard the seeds.
  • Add the finely diced fruit and ginger to the bowl, then stir in the ginger syrup.
  • Finally, stir in the shredded herbs. Leave to stand at room temperature for 20 minutes to allow the flavours to infuse.
  • When ready to serve, spoon over your favourite ice cream for an instant tropical dessert.
