Tropical Fruit Trifles

  • 1 large passionfruit
  • 2 tablespoons icing sugar (or to taste)
  • juice of 1 orange
  • 4 kiwi fruits
  • 1 mango
  • 10–12 seedless green and red grapes
  • 4 thick slices sponge cake
  • 400 ml (14 fl oz) ready-made fresh custard
  • 100 ml (3 1/2 fl oz) double cream, softly whipped
  • julienned orange zest, to decorate
  • Prepare the fruit by scraping the seeds from a passionfruit into a large mixing bowl. Mix in the icing sugar and orange juice.
  • Peel and finely dice the kiwi fruits. Peel the mango, then cut the flesh into 1 cm (1/2 in) dice.
  • Add the diced fruit to the passionfruit mixture with the grapes. Chill until ready to serve.
  • To assemble the trifles, take 4 dessert bowls or glasses and arrange the cake and fruit salad in the base. Pour the custard over the top.
  • Place a dollop of whipped cream on top of the custard and serve decorated with the orange zest.
