Tropical Fruit Salsa

  • 1 passionfruit
  • 1 ripe mango, peeled, stoned and finely diced
  • 100 g (3 1/2 oz) pineapple, finely diced
  • 1 knob of stem ginger, finely diced
  • 1 teaspoon stem ginger syrup
  • 1 teaspoon finely shredded mint
  • 1/2 teaspoon finely shredded coriander
  • ice cream, to serve (optional)
  • Halve the passionfruit, spoon out the flesh and place in a sieve over a bowl. Using the back of a spoon, press the seeds to squeeze out all the juice. Discard the seeds.
  • Add the fruit and stem ginger, then stir in the stem ginger juice. Stir in the herbs, then leave to stand at room temperature for 10 minutes to allow the flavours to infuse.
  • Spoon into bowls and serve with ice cream, if liked.
