Tortillas with Aubergine Yogurt

  • 4 tablespoons olive oil
  • 1 aubergine, thinly sliced
  • small handful of mint, chopped
  • small handful of chopped parsley
  • 2 tablespoons chopped chives
  • 1 green chilli, deseeded and thinly sliced
  • 200 ml (7 fl oz) Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 large tortillas
  • 7 cm (3 inch) length of cucumber, thinly sliced
  • salt, pepper and paprika

Heat the oil in a frying pan. Add the aubergine and fry for about 10 minutes until golden on both sides. Drain and set aside to cool.

Mix the herbs with the chilli, yogurt and mayonnaise in a bowl and season to taste with salt and pepper.

Arrange the fried aubergine slices over the tortillas and spread with the Greek yogurt mixture. Arrange the cucumber slices on top. Roll up each tortilla, sprinkle with paprika and cut into thick slices. Chill until required.
