Tortelloni with Easy Olive and Tomato Sauce

  • 2 tablespoons olive oil
  • 1 garlic clove, sliced
  • 75 g (3 oz) pitted black olives
  • 150 g (5 oz) cherry tomatoes, halved
  • handful of basil leaves
  • 500 g (1 lb) pack cheese tortelloni
  • salt and pepper
  • Heat a medium-sized frying pan until hot, then add the oil. Add the garlic and olives and cook for 30 seconds until beginning to sizzle, then tip in the tomatoes and cook for a couple of minutes or until the tomatoes are beginning to soften. Season and stir in the basil leaves.
  • Meanwhile, cook the pasta in a large saucepan of salted boiling water according to the pack instructions. Drain and toss together with the tomato sauce. Serve immediately.
