Meals and Courses

  • 1 red onion, finely chopped
  • 4 ripe tomatoes, finely chopped
  • 1 cucumber, finely chopped
  • 1 red chilli, deseeded and finely chopped
  • small handful of fresh coriander, finely chopped
  • 4 tablespoons lemon juice
  • 50 g (2 oz) roasted peanuts, roughly chopped
  • salt and pepper

Place the onion, tomatoes, cucumber, chilli and coriander into a bowl and pour over the lemon juice. Season well, cover and allow to stand at room temperature for 10–15 minutes.

Before serving, stir to mix well and sprinkle over the chopped nuts. Serve with toasted pappadoms or hot Naan (see page 224).
