Smoothie, Cocktail and Juice

  • 2 celery sticks, plus leaves to serve (optional)
  • 4 tomatoes
  • large handful of parsley
  • rind and juice of ½ lemon
  • ice cubes

Trim the celery sticks and cut them into 5 cm (2 inch) lengths. Juice the tomatoes and parsley with the celery, lemon juice and rind.

Pour the juice into a tall glass over ice, add the celery leaves, if using, and serve immediately.
