Rub 1 tablespoon of the oil over the fish and place in a shallow baking tray. Season well.
Scatter the tomatoes and chilli, orange rind and lime rind over the top of each steak. Squeeze over the fruit juices and then drizzle with the remaining oil.
Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 15 minutes, or until the fish is just cooked through. Serve sprinkled with the chopped coriander.
