Toffee Bananas & Vanilla Cream

  • 25 g (1 oz) unsalted butter
  • 2 tablespoons dark soft brown sugar
  • 2 large bananas, sliced
  • 8 tablespoons double cream
  • 1 teaspoon rum
  • 4 tablespoons double cream
  • few drops of vanilla extract

Put the butter and sugar in a nonstick frying pan. Heat gently until the sugar has melted. Add the bananas and toss in the sauce for 1–2 minutes until warm and soft. Add the cream and rum and heat through.

Make the vanilla cream by whipping the cream and vanilla extract until just light and beginning to hold its shape. Serve with the bananas and drizzle with toffee sauce, if liked.
