Tiger Prawns & Watercress Mayo

  • 3 tablespoons mayonnaise
  • large handful of watercress, plus extra to serve
  • 2 gherkins, roughly chopped
  • grated rind and juice of ½ lemon
  • 250 g (8 oz) tiger prawns, cooked
  • salt and black pepper

Put the mayonnaise, watercress, gherkins and lemon rind and juice into a food processor or blender and process until almost smooth. Season to taste with salt and pepper.

Toss the prawns in the dressing to coat and serve with fresh, crusty bread and extra watercress.
