Special Diet

  • 250 g (8 oz) freshly cooked mixed long-grain and wild rice, cooled
  • 2 carrots, thinly sliced
  • ½ cucumber, halved, deseeded and thinly sliced
  • 1 red pepper, cored, deseeded and thinly sliced
  • 75 g (3 oz) bean sprouts
  • 4 spring onions, thinly sliced
  • 4 tablespoons chopped fresh coriander
  • 50 g (2 oz) roasted unsalted peanuts, roughly chopped
  • lime wedges, to serve
  • 4 tablespoons sweet chilli sauce
  • grated rind and juice of 2 limes
  • 2 teaspoons light soy sauce

Place the cooked rice, carrots, cucumber, red pepper, bean sprouts, spring onions and coriander in a large bowl and mix together thoroughly.

Make the dressing. Whisk the dressing ingredients together in a small bowl, then pour over the salad and toss to coat.

Scatter the salad with the peanuts and serve immediately with lime wedges.
