• 500 g (1 lb) minced beef
  • 1 tablespoon Thai red curry paste
  • 25 g (1 oz) fresh white breadcrumbs
  • 2 tablespoons chopped fresh coriander
  • 1 egg, lightly beaten
  • 1 tablespoon light soy sauce
  • black pepper
  • 1 French stick, cut into 4 and split lengthways
  • shredded lettuce
  • sweet chilli sauce

Put the minced beef in a bowl and stir in the red curry paste, breadcrumbs, coriander, egg, soy sauce and pepper. Mix together thoroughly with your hands until sticky. Shape the mixture into 8 mini burgers.

Heat a ridged griddle pan until very hot, add the burgers and cook over a high heat for 4–5 minutes on each side until charred and cooked through.

Serve each burger in the French sticks with some shredded lettuce and sweet chilli sauce.
