Special Diet

  • 150 g (5 oz) bulgar wheat
  • 75 g (3 oz) unsalted, shelled pistachio nuts
  • 1 small red onion, finely chopped
  • 3 garlic cloves, crushed
  • 25 g (1 oz) flat leaf parsley, chopped
  • 15 g (½ oz) mint, chopped
  • finely grated rind and juice of 1 lemon or lime
  • 150 g (5 oz) ready-to-eat prunes, sliced
  • 4 tablespoons olive oil
  • salt and pepper

Put the bulgar wheat in a bowl, cover with plenty of boiling water and leave to soak for 15 minutes.

Meanwhile, put the nuts in a separate bowl and cover with boiling water. Leave to stand for 1 minute, then drain. Rub the nuts between several thicknesses of kitchen paper to remove most of the skins, then peel away any remaining skins with your fingers.

Mix the nuts with the onion, garlic, parsley, mint, lemon or lime rind and juice and prunes in a large bowl.

Drain the bulgar wheat thoroughly in a sieve, pressing out as much moisture as possible with the back of a spoon. Add to the other ingredients with the oil and toss together. Season to taste with salt and pepper and chill until ready to serve.
