  • 2 cucumbers
  • 1 teaspoon dried chilli flakes
  • 2 spring onions, finely chopped
  • 1 garlic clove, crushed
  • ½ teaspoon soft light brown sugar
  • 5 teaspoons light soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons chilli oil
  • ¼ teaspoon black rice vinegar
  • ½ teaspoon sesame seeds, toasted

Cut the cucumbers into finger-thick batons and place in a wide glass or ceramic bowl.

Mix together all the remaining ingredients in a small bowl and pour over the cucumber. Toss to mix well. Cover and leave to marinate at room temperature for 1 hour.

Spoon on to small plates and serve with rice.
