Sweet Ricotta and Raspberries

Ingredients
  • 450 g (14 1/2 oz) ricotta cheese
  • grated rind of 2 oranges
  • 3 tablespoons honey
  • 350 g (11 1/2 oz) raspberries
Directions
  • Mix together the ricotta, orange rind and 2 tablespoons of the honey in a bowl.
  • Gently stir in the raspberries.
  • Divide the mixture between 4 glasses or small bowls.
  • Drizzle with the remaining honey and serve immediately.
