Put the sweet potato slices in a saucepan of boiling water and cook for 7—8 minutes or until just tender, then drain.
Heat the oil in a medium nonstick frying pan, add the spring onions and sweet potato slices and fry for 2 minutes.
Stir the coriander into the beaten eggs, season with plenty of pepper and pour into the pan. Arrange the slices of goats' cheese on top and continue to cook for 3—4 minutes until almost set.
Put the pan under a preheated hot grill and cook for 2—3 minutes until golden and bubbling. Serve immediately, with a green salad if liked.
