Sweet Cucumber and Orange Blossom Salad

  • 2 cucumbers, peeled and grated
  • juice of 1/2 lemon
  • 1–2 tablespoons orange blossom water
  • 1–2 teaspoons sugar or runny honey
  • salt
  • 1/2 teaspoon ground cinnamon, for dusting
  • Place the grated cucumber in a colander, sprinkle with salt and leave to stand for about 5 minutes. Using your hands, squeeze out the excess water and place the cucumber in a bowl.
  • Mix together the lemon juice, orange blossom water and sugar or honey in a separate bowl, then pour over the cucumber. Toss well, cover and chill for 10 minutes. Just before serving, dust with the cinnamon.
