Sweet and Sticky Raisin Pudding

Ingredients
  • 6 tablespoons golden syrup
  • 125 g (4 oz) butter, softened
  • 125 g (4 oz) self-raising flour
  • 125 g (4 oz) caster sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 75 g (3 oz) raisins
  • pouring cream or custard, to serve (optional)
Directions
  • Pour the golden syrup into a buttered 20 x 25 cm (8 x 10 inch) shallow ovenproof dish.
  • Beat the remaining ingredients together until pale and creamy and spoon over the syrup base. Bake in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 20–25 minutes or until risen and golden.
  • Serve with pouring cream or custard, if desired.
