Smoothie, Cocktail and Juice

  • ½ lime
  • small handful mint, plus an extra sprig to decorate
  • 125 g (4 oz) gooseberries
  • 30 g (1¼ oz) ground almonds
  • 150 ml (¼ pint) non-dairy milk
  • 1 teaspoon elderflower cordial

Roughly peel the lime. Juice the lime with the mint.

Transfer the juice to a food processor or blender, add the remaining ingredients and process until smooth.

Pour the smoothie into a glass, decorate with a sprig of mint and serve immediately.
