• 2 ripe peaches, pitted and sliced
  • 4 ripe red plums, pitted and sliced
  • 150 g (5 oz) mixed raspberries and blackberries (or all raspberries)
  • 200 g (7 oz) mascarpone cheese
  • 4 tablespoons caster sugar
  • 2 tablespoons double cream
  • grated rind of 1 lime

Arrange all the fruit in a shallow ovenproof dish. Mix the mascarpone with 2 tablespoons of the sugar, the cream and the lime rind, then spoon over the fruit and spread into an even layer.

Sprinkle the top with the remaining sugar, then put on a baking sheet and cook in a preheated oven, 190°C (375°F), Gas Mark 5, for 15 minutes until the cheese has softened and the sugar topping has caramelized. Serve immediately.
