Special Diet

  • 250 g (8 oz) mixed summer fruit, such as raspberries, blueberries and strawberries, thawed if frozen
  • finely grated rind and juice of 1 large orange
  • 1 tablespoon redcurrant jelly
  • 250 g (8 oz) plain soya yogurt, to serve

Put the fruit, orange rind and juice and redcurrant jelly in a large saucepan. Cover and cook gently for 5 minutes or until the juices flow and the fruit is softened.

Remove the pan from the heat and set aside. When the fruit is cool, chill it and serve with soya yogurt.
