Strawberry Ice Cream Sundae

  • 400 g (13 oz) strawberries, hulled and quartered
  • 50 g (2 oz) icing sugar
  • 8 scoops of vanilla ice cream
  • 50 g (2 oz) mini marshmallows
  • hundreds and thousands, to decorate
  • Blend half the strawberries with the icing sugar, using a hand-held blender or food processor, until smooth.
  • Put 1 scoop of ice cream in the bottom of each of 4 tall glasses, top with half the remaining quartered strawberries, spoon over half the strawberry purée and sprinkle with half the marshmallows.
  • Repeat the layers and finish with a sprinkle of hundreds and thousands. Serve immediately.
