Strawberry Eton Mess

  • 500 g (1 lb) strawberries, hulled and chopped
  • 2 teaspoons icing sugar
  • 450 ml (3/4 pint) double cream
  • 8 meringue nests, broken into 2.5 cm (1 inch) pieces
  • Place half the strawberries and the icing sugar in a food processor or blender and blend to form a purée.
  • Lightly whip the cream in a large bowl with a hand-held electric whisk until it forms soft peaks, then fold in the meringue nests and remaining strawberries. Swirl in half the purée.
  • Spoon into 4 glasses, drizzle with the remaining purée and serve immediately.
