Strawberry Cream Puffs

  • 300 g (10 oz) ready-rolled puff pastry
  • 4 tablespoons icing sugar
  • 300 ml (1/2 pint) double cream
  • 300 g (10 oz) strawberries, hulled and halved
  • Cut the pastry into 12 equal rectangles and arrange on a baking sheet, then place another baking sheet on top. Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 10 minutes until golden and crisp.
  • Sift half the icing sugar over the pastry puffs and cook under a preheated hot grill for 30 seconds until the sugar melts. Leave to cool.
  • Whisk the cream with the remaining icing sugar until soft peaks form. Arrange the pastry strips, whipped cream and strawberries on plates and serve immediately.
