Meals and Courses

  • 1 large cucumber, halved lengthways, deseeded and thinly sliced
  • 250 g (8 oz) strawberries, halved or quartered if large
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon clear honey
  • 3 tablespoons olive oil
  • salt and pepper

Put the cucumber slices and strawberry halves or quarters in a shallow bowl.

Put all the dressing ingredients in a screw-top jar, season to taste with salt and pepper, and shake well.

Pour the dressing over the cucumber and strawberries. Toss gently, then cover and chill for 5–10 minutes before serving.
