Strained Yogurt with Honeycomb

  • 900 g (2 lb) thick natural yogurt
  • 225 g (7 1/2 oz) fresh honeycomb
  • ground cinnamon, for dusting
  • Line a sieve with a large piece of muslin so that the edges flop over the sides, then place over a bowl. Tip the yogurt into the muslin and leave to drip for 25 minutes. Tip the strained yogurt into a bowl and beat until smooth and creamy.
  • Spoon the yogurt into 4 serving bowls. Divide the honeycomb between the bowls and drizzle any loose honey over the top. Dust with cinnamon and serve immediately.
