Stir-Fried Teriyaki Beef with Noodles and Greens

  • 2 tablespoons vegetable oil
  • 325 g (11 oz) beef fillet, cut into strips
  • 2 garlic cloves, sliced
  • 1 teaspoon finely grated fresh root ginger
  • 125 g (4 oz) spring greens, chopped
  • 300 g (10 oz) ready-cooked udon noodles
  • 4 tablespoons teriyaki sauce
  • 1 tablespoon sesame seeds
  • Heat the oil in a large wok. Add the beef strips and cook for 1 minute until browned, then remove from the pan and set aside.
  • Add the garlic, ginger and greens to the pan and stir-fry for 2–3 minutes until the greens start to wilt.
  • Return the beef to the pan, add the noodles and teriyaki sauce, then cook, adding a little boiling water if necessary, until heated through. Scatter with the sesame seeds and serve immediately.
