Stir-Fried Mixed Vegetables with Cashew Nuts

Ingredients
  • 2 tablespoons groundnut oil
  • 50 g (2 oz) cashew nuts
  • 2 cm (¾ inch) piece of fresh root ginger, peeled and finely chopped
  • 250 g (8 oz) Chinese leaves or cabbage, shredded
  • 50 g (2 oz) cauliflower florets
  • 60 g (2½ oz) broccoli florets
  • 1 red pepper, deseeded and sliced
  • 6 baby corn, halved lengthways
  • 4 garlic cloves, chopped
  • 1 tablespoon tamari soy sauce
Directions
  • Heat the oil in a wok over a high heat, add the cashew nuts and ginger and stir-fry for 1 minute.
  • Mix together the remaining ingredients in a bowl, then throw into the wok and cook over a high heat for 4–5 minutes, stirring and turning continuously. Serve immediately.
