Stir-Fried Beef and Leeks

  • 2 tablespoons sunflower oil
  • 400 g (13 oz) sirloin steak, cut into strips
  • 2 garlic cloves, crushed
  • 1 teaspoon dried chilli flakes
  • 4 leeks, trimmed and thinly sliced
  • juice of 1 lemon
  • 2 tablespoons crème fraîche
  • salt and pepper
  • steamed broccoli, to serve
  • Heat the oil in a wok or large frying pan until hot, add the beef and stir-fry for 2 minutes. Remove from the pan with a slotted spoon.
  • Add the garlic, chilli flakes and leeks to the pan and stir-fry for 3–4 minutes.
  • Return the beef to the pan, stir in the lemon juice and crème fraiche and cook for 2 minutes until heated through.
  • Season to taste and serve with steamed broccoli.
