Stilton Welsh Rarebit

  • 15 g (½ oz) butter
  • 4 spring onions, sliced
  • 100 g (4 oz) Stilton cheese, crumbled
  • 1 egg yolk
  • a little milk
  • 2 slices of granary bread, lightly toasted
  • 2 slices of bacon, grilled

Heat the butter in a small saucepan and fry the spring onions for 2–3 minutes until softened. Leave to cool, then mix with the Stilton and egg yolk, adding enough milk to make a spreadable mixture.

Spread the mixture over the toast and cook under a preheated hot grill for about 2 minutes until golden and bubbling. Serve topped with the grilled bacon.
