Steamed Lemon Dill Salmon and Potatoes

  • 400 g (13 oz) new potatoes, sliced
  • 2 salmon fillets
  • 75 g (3 oz) French beans, topped and tailed
  • 4 tablespoons crème fraîche
  • finely grated rind and juice of 1/2 lemon
  • handful of chopped dill
  • 1 tablespoon capers, rinsed and drained
  • salt and pepper
  • Set a large steamer over a saucepan of gently simmering water. Place the potatoes in a shallow, heatproof dish which will fit inside the steamer and season well. Cover and cook for 10 minutes.
  • Place the salmon on top of the potatoes and scatter around the beans. Cook for a further 7–10 minutes or until the fish and vegetables are cooked through.
  • Meanwhile, mix together the crème fraîche, lemon rind and juice, dill and capers and season to taste. Serve with the salmon and vegetables.
