Steaks with Garlic-Herb Butter

  • 4 T-bone steaks, about 500 g (1 lb) each
  • 1½ tablespoons chopped thyme
  • 2 tablespoons extra virgin olive oil
  • salt and black pepper
  • 125 g (4 oz) butter, softened
  • 1 garlic clove, crushed
  • 2 tablespoons drained capers
  • 1 tablespoon chopped parsley

Put the ingredients for the butter in a bowl and season to taste. Shape into a log, wrap in clingfilm and chill until required. Cut into slices.

Season the steaks with salt, pepper and thyme and rub with oil. Cook on a hot barbecue for 5 minutes on each side, then wrap loosely in foil and set aside to rest for 5 minutes. Serve topped with the butter.
