Steak with Anchovy Herb Butter

  • 2 sirloin steaks
  • 1 teaspoon vegetable oil
  • salt and black pepper
  • 25 g (1 oz) unsalted butter, slightly softened
  • 3 anchovy fillets, drained and finely chopped
  • 1 tablespoon chopped herbs, such as chives, parsley and coriander

Rub the steak with the oil and season to taste with salt and pepper. Heat a frying pan or griddle until it is really hot and cook the steak for 2 minutes on each side or until cooked to your liking.

Mash together the butter, anchovy fillets and herbs. Put half the flavoured butter on each steak and serve with chicory and Roquefort salad (see below) and new potatoes, if liked.
