Spinach, Cherry Tomato and Blue Cheese Pasta Salad

  • 400 g (13 oz) cooked and cooled macaroni (or any short-shaped pasta)
  • 50 g (2 oz) baby spinach
  • 400 g (13 oz) halved cherry tomatoes
  • 4 sliced spring onions
  • 200 ml (7 fl oz) ready-made blue cheese dressing
  • salt and pepper
  • Place the cooked and cooled macaroni in a salad bowl with the spinach, cherry tomatoes and spring onions.
  • Drizzle over the blue cheese dressing.
  • Season to taste, toss to mix well and serve immediately.
