Spicy Turkey Burgers with Red Pepper Salsa

Ingredients
  • 400 g (13 oz) minced turkey
  • 2 cm (¾ inch) piece of fresh root ginger, peeled and grated
  • 4 spring onions, finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 egg yolk
  • 2 tablespoons chopped coriander leaves
  • 4 Little Gem lettuces
  • 1 red pepper, deseeded and diced
  • 100 g (3½ oz) tomatoes, diced
  • 1 small red onion, finely diced
  • ½ tablespoon chopped parsley
  • ½ tablespoon chopped coriander leaves
  • 1 tablespoon red wine vinegar
  • ½ tablespoon olive oil
Directions
  • Mix together the minced turkey, ginger, spring onions, chilli, egg yolk and coriander.
  • Using wet hands, shape the mixture into 4 burgers.
  • Heat a lightly oiled frying pan and cook the burgers for 5–6 minutes on either side, until golden and cooked through.
  • Meanwhile, for the salsa, mix together the pepper, tomatoes, onion, parsley, coriander, vinegar and oil.
  • Serve the burgers on a bed of lettuce leaves, topped with the salsa.
