Spicy Sweet Potato and Feta Salad

  • 5 tablespoons olive oil
  • 2 sweet potatoes, thinly sliced
  • 1 tablespoon white wine vinegar
  • 150 g (5 oz) baby spinach leaves
  • 1 tablespoon finely chopped red onion
  • 125 g (4 oz) feta cheese, crumbled
  • 1 red chilli, sliced
  • 50 g (2 oz) pitted black olives
  • salt and pepper
  • Toss 2 tablespoons of the oil with the sweet potatoes. Season well and cook in a preheated hot griddle pan for 3 minutes on each side until tender and lightly charred.
  • Meanwhile, mix together the remaining oil with the white wine vinegar and season to taste. Toss with the spinach and red onion and arrange on serving plates. Arrange with the sweet potatoes, feta, chilli and olives and serve immediately.
